Quick Protein Velveting

Prep Time 10 minutes

Ingredients

Marinate ingredients (per chicken breast or 250-300g of other protein)

  • 1 tsp garlic powder
  • 1 tsp potato starch (cornflour is an okay substitute but doesn't crisp as well)
  • 1 tsp light soy sauce
  • tsp salt
  • tsp bicarb soda
  • tsp MSG (optional)
  • 1 tbsp olive oil

Instructions

  • Slice the protein against the grain (very important)
  • Mix in all of the above ingredients and massage in by hand.
  • Let it rest for a minimum of an hour before cooking, preferably overnight
