Quick Protein Velveting
Ingredients
Marinate ingredients (per chicken breast or 250-300g of other protein)
- 1 tsp garlic powder
- 1 tsp potato starch (cornflour is an okay substitute but doesn't crisp as well)
- 1 tsp light soy sauce
- ⅙ tsp salt
- ⅙ tsp bicarb soda
- ⅙ tsp MSG (optional)
- 1 tbsp olive oil
Instructions
- Slice the protein against the grain (very important)
- Mix in all of the above ingredients and massage in by hand.
- Let it rest for a minimum of an hour before cooking, preferably overnight
